Shrimp Cocktail Lettuce Cups

A contemporary take on the classic shrimp cocktail. Chunks of shrimp and egg are tossed with a tangy cocktail sauce and placed in delicate lettuce cups. Enjoy this finger-food delight!

Ingredients

1 can (106 g) CLOVER LEAF® Cocktail Shrimp, drained and chopped in chunks
1/4 cup Ketchup
2 tsp Horseradish, prepared
1 tsp Lemon juice, fresh
1/4 tsp Hot sauce
1/4 tsp Worcestershire sauce
1 Egg, hard-boiled and chopped
1/3 cup Red onion, finely chopped
1/3 tsp Black pepper
1 tbsp Cilantro, fresh, finely chopped
8 Bibb (Boston or Butter) lettuce leaves, medium

PREP INSTRUCTIONS

  1. In a medium bowl, stir together ketchup, horseradish, lemon juice, hot sauce, and Worcestershire sauce until well combined. Gently fold in the shrimp, egg, onion and pepper until combined.
  2. Place 1/8th of the mixture on each lettuce cup. Garnish with cilantro. Serve immediately.
