No-Stress Salad

You need very little to make an easy, healthy meal. Honestly, you don’t even have to cook. This quick and easy homemade salad with fresh veggies and features our White Tuna, which you can enjoy while watching your favorite show.

Ingredients

1 can (170 g)
Clover Leaf® Solid or Chunk White Albacore Tuna in Water, drained
1 cup
Baby romaine lettuce leaves, chopped
½ cup
Baby spinach leaves
½ cup
Baby arugula leaves
1
Radish, thinly sliced
¾ cup
Red, green or yellow bell pepper, chopped
½ cup
Cherry tomatoes, halved
¼ cup
Red onion, thinly sliced
Garnish with capers, pumpkin seeds and fresh dill or parsley (optional)
Dressing:
4 tbsp
Extra virgin olive oil
2 tbsp
Vinegar or lemon juice
2 tsp
Dill or parsley, fresh, finely chopped
1/2 tsp
Dijon mustard
Pinch of sugar
Salt and pepper, to taste

Preparation

  1. Place lettuce, spinach and arugula leaves in a medium bowl. Top with radish, peppers, tomatoes, onion, and half of the drained tuna.
  2. Whisk dressing ingredients in a small bowl until well combined. Season to taste.
  3. Pour dressing onto salad and gently toss together. Top with remaining tuna.
  4. Garnish with capers, seeds and fresh herbs (optional).
  5. Serve immediately.
