Mediterranean Mixed Green Bean Tuna Salad with Sherry Vinaigrette

Step up your Mediterranean tuna salad game with this easy Green Bean Tuna Salad and Clover Leaf Flaked Tuna in Olive Oil in Sherry Vinaigrette. It’s the perfect pairing with any dishes you create.

Ingredients

Sherry Vinaigrette
¼ cup (40 g) Sherry vinegar
1 tsp (20 g) Dijon mustard
1 clove (5 g) Garlic, grated
½ cup (10 g) Vegetable oil
¼ tsp (5g) Salt to taste
Green Bean Salad
2 cups (180 g) cooked green beans
4 (70 g) heads Baby gem lettuce (or 1 head romaine lettuce)
1 cup (30 g) Radicchio leaves
1 tbsp (30 g) Capers
1/4 cup (50 g) Castelvetrano green olives, pitted
1 cup (35 g) Radish, sliced
Garnish
½ bunch (15 g) Fresh basil leaves, picked
1/4 cup (10 g) Parsley leaves, picked
1 can (142 g) Clover Leaf Flaked Light Tuna in Olive Oil, drained

PREP INSTRUCTIONS

  1. Start by making the vinaigrette. Whisk all ingredients together until emulsified.
  2. In a bowl, toss your green beans, lettuce, radicchio, capers, olives and radish in the vinaigrette. Garnish with fresh herbs and toss again. Place salad on a plate.
  3. Top off with Clover Leaf Flaked Tuna in Olive Oil and serve.
