Spicy Thai Cucumber Salad

What an incredible combination – spicy tuna in a tangy, peanuty dressing with a hint of sesame. The fresh flavour of cucumber, cilantro and scallions balance out the dish while hitting your taste buds from all sides.

Ingredients

1/8 cup (25 mL) reduced-sodium, fat-free chicken broth
1 tbsp (15 mL) reduced-sodium soy sauce
2 1/4 tsp (11 mL) reduced-fat peanut butter
1/4 tsp (1 mL) sesame oil
1 can (85 g) Clover Leaf Flaked Light Tuna, Spicy Thai Chili
1 cup (250 mL) diced cucumber
1 scallions, chopped
2 tbsp (30 mL) chopped fresh cilantro
2 cups (500 mL) chopped Romaine lettuce

PREP INSTRUCTIONS

  1. In a small bowl, whisk together chicken broth, soy sauce, peanut butter, and sesame oil. Set aside.
  2. In a medium bowl, combine tuna, cucumber, scallions, and cilantro. Toss to combine.
  3. Add dressing and toss to coat.
  4. Add Romaine lettuce and toss to coat.
  5. Serve immediately.
